Roast chicken with tricolour peppers and chutney

(Artikel slegs in Engels beskikbaar) In her new book Shanaaz’s Real Food, well-known food personality Shanaaz Parker shares quick and easy, lightly spiced recipes acrossdifferent cultures with us. Herewith one of her favourite recipes:


Ingredients
  • 1 chicken, cut into portions
  • 50 ml cake fl our
  • 15 ml chicken seasoning
  • 15 ml garlic and ginger paste
  • 5 ml freshly ground black pepper
  • salt to taste
  • 100 ml fruit chutney
  • 60 ml Worcestershire sauce
  • 60 ml mustard sauce
  • 100 ml tomato sauce
  • 15 ml lemon juice
  • 1 large onion, sliced into rings
  • 1 red pepper, deseeded and sliced into thin rings
  • 1 yellow pepper, deseeded and sliced into thin rings
  • 1 green pepper, deseeded and sliced into thin rings
  • 30 ml butter
  • fresh coriander leaves, for garnishing
Instructions
  1. Preheat the oven to 180 °C. Coat a casserole dish with non-stick cooking spray.
  2. Wash the chicken and pat dry with paper towel. Mix the cake fl our, seasoning, garlic and ginger paste, pepper and salt together in a bowl and rub over the chicken. Place the chicken in the casserole dish.
  3. Pour the chutney, Worcestershire sauce, mustard sauce, tomato sauce and lemon juice into a medium bowl. Add 250 ml boiling water and mix well. Pour the mixture over the chicken.
  4. Pack the onion and pepper rings on top of the chicken. Cut the butter into small cubes and place on top of the peppers. Cover the dish with foil and roast
  5. in the oven for 30 minutes. Remove the foil, sprinkle coriander over the chicken and roast uncovered in the oven for another 15–20 minutes until the chicken is cooked through and the sauce has thickened. Spoon some sauce over the onion rings. Serve with a medley of roasted vegetables.
